
Seven-Minute Frosting
2 Unbeaten Egg Whites
1-1/2 Cups / 375 mL Sugar
1/2 Cup / 125 mL Water
1 Tbsp. / 15 mL Light Corn Syrup
Dash Salt
2-1/2 teas. / 12.5 mL Watkins Vanilla, Double
Strength
In double boiler top, combine all ingredients except
vanilla (do not place over water). Beat about 1 minute with hand-held electric mixer until
blended. Place over (not touching) boiling water. Cook, beating constantly, until frosting
forms soft peaks (this may take a little more than seven minutes). Remove from boiling
water. Add vanilla and beat until stiff peaks form. Makes enough to frost tops and sides
of two 8- or 9-inch / 20- or 23-cm layer cakes, 12 servings.
