Apple Muffins

1 2/3 c All-purpose flour
2 1/2 tsp Watkins Baking Powder ~ aluminum free
1/2 tsp Salt Sugar substitute to equal 1 Tbl sugar
1 tsp Watkins Pure Ground Cinnamon
1/4 tsp Watkins Pure Ground Nutmeg
2/3 c Skim milk
1/4 c Reduced-calorie margarine Melted
1 Egg - lightly beaten
1 c Apple - Minced
Watkins alcohol-free Cooking Spray

Combine first 6 ingredients in a medium bowl. Combine milk, margarine, and egg; add egg mixture to dry ingredients,stirring just until dry ingredients are moistened. Fold in apple. Spoon batter into nonstick muffin pans coated with Watkins Cooking Spray, filling two-thirds full. Bake at 400 degrees for 25 minutes or until lightly browned.
