Basic Crumb Topped Coffee Cake
4 Cups Flour
2 Cups Sugar
4 teas. Watkins
Baking Powder
1 teas. Salt
2 Sticks Margarine or Butter
2 Large Eggs
Enough Milk (see below)
2 teas. Watkins Vanilla, Double Strength
1/2 teas. Watkins
Lemon Extract
1 Tbsp. Watkins
Cinnamon
Mix the first five ingredients until crumbly. Reserve 1
cup for topping. Combine eggs with enough milk to equal 2 cups. Add Watkins Vanilla and lemon. Add liquids to
crumb mixture and beat 4 minutes at medium speed until creamy. Pour mixture into a 9 x 13
pan ( or 2, 8 inch round cake pans ) and sprinkle on reserved crumbs. and sprinkle with
cinnamon. Bake in a 350*F oven 35 to 40 minutes or tested done. Cool, serve warm or at
room temperature.
