Cheddar Cheese Log
2 Lbs.Sharp Cheddar Cheese, grated
1 Tbsp. Watkins
Mustard of choice
1/2 teas. Watkins
Calypso Hot Pepper Sauce (or can use Jalapeño Hot Pepper
Sauce for more bite)
1/2 Cup Finely Chopped Italian Fresh Parsley
1/4 Cup Finely Chopped Pimientos
1/3 Cup Coarsely Chopped Pecans
Mix all ingredients except pecans until they are evenly
blended, then adjust seasonings according to your taste. Place a piece of plastic wrap
about 9 inches long on a clean surface. Mound the cheese mixture along the edge nearest
you, then roll in the plastic, pressing and molding to form a log about 1 and 1/2 inches
wide and 8 inches long. Gently remove the plastic and roll the log in the pecans. Rewrap
the log in fresh plastic and chill the log for two hours or overnight. Bring to room
temperature before serving. It's especially good with sesame crackers.
