
Chicken & Shrimp Creole
1 lb. Boneless, Skinned Chicken Breasts
1 Tbsp. Watkins Original Grapeseed Oil
2 Onions, coarsely chopped
1/2 teas. Watkins Liquid Garlic Spice
1 each Red & Green Pepper, coarsely chopped
1 Can (28 oz.) Diced Tomatoes, undrained
4 Cups Prepared Watkins Chicken Soup Base
1 teas. Watkins Thyme
1 teas. Watkins Oregano
1/4 teas. Watkins Cayenne Pepper
2 Cups rice
1 lb. Medium Shrimp, cooked
2 teas. Watkins Parsley
Cut chicken into cubes and cook in large non-stick
skillet with oil over medium heat for approx. 3 minutes or until lightly browned. Add
onion and liquid garlic; cook 3 minutes or until softened. Stir in peppers and tomatoes
and then add soup base, thyme, oregano and cayenne pepper and bring to a boil. Stir in
rice; cover, reduce heat and simmer for 25 minutes or until most of the liquid is
absorbed. Add shrimp and cook for 5 minutes or until shrimp are hot. Stir in parsley.
Makes 8 servings. Can also be spiced up even more with Watkins Cajun Pepper.
