Fantastic French Toast

Take 2 Thin Slices of Bread
1 Tbsp. Softened Cream Cheese
Blueberry, Raspberry or Cherry Preserves
1 Egg
1/2 teas. Watkins Vanilla, Original Double Strength
1 teas. Milk
Watkins Cooking Spray

Spread cream cheese on a slice of bread, then spread a thin layer of preserves over it. Top with the second slice of bread. Break the egg into a bowl, add the milk and vanilla; beat with a fork. Pick up the sandwich with your hands and put it in the egg mix until bottom bread absorbs egg. Turn it carefully. Keep turning until all of the egg mix is soaked in. Spray pan and heat till hot then put sandwich in the pan and fry until light golden brown (about 2 minutes). Slip spatula under it and turn to brown on the other side. Serve with a spoonful more preserves.
