
Frozen Cranberry Salad
1 Medium Orange
1 Package (8 oz. / 227 g) Cream Cheese, softened
1/4 Cup / 60 mL Water
1-1/2 Tbsp. / 25 mL Watkins Black Cherry Punch Concentrate
1 teas. / 5 mL Watkins Original Double-Strength Vanilla
1/2 teas. / 2.5 mL Watkins Cinnamon
1 Can (16 oz. / 454 g) Whole-Berry Cranberry Sauce
1 Medium Apple, cored and finely chopped
1/2 Cup / 125 mL Chopped, Pitted Dates
1 Cup / 250 mL Whipping Cream
Lettuce Leaves
Peel and section orange. Finely chop orange sections; set
aside. Beat together cream cheese, water, beverage concentrate, vanilla, and cinnamon
until smooth. Stir in orange sections, cranberry sauce, apples, and dates. Whip cream
until soft peaks form. Fold whipped cream into cream cheese mixture. Turn into a 5-Cup /
1.25-liter mold, 8 × 4 × 2-inch / 20 × 10 × 4-cm loaf pan, or 9 individual molds.
Freeze at least 3 hours. Before serving, let stand at room temperature for 10 to 15
minutes to soften slightly. Unmold onto lettuce-lined plate. Garnish with additional
orange sections or whole cranberries if desired. Makes 9 servings.
