Lazy Daisy Cake

1 1/2 Cup Boiling Water
1 Cup Quick Oatmeal
1/2 Cup Butter or Margarine
1 Cup Sugar
1 Cup Brown Sugar - firmly packed
2 Eggs
1 1/2 Cups Flour
1 teas. Watkins Cinnamon
1 teas. Baking Soda
1/2 teas. Salt
1 teas. Watkins Nutmeg
1 teas. Watkins Vanilla, Original Double-Strength

Topping:
1/2 Cup White Sugar
1 Cup Chopped Nuts
6 Tbsp. Butter
1/4 Cup Brown Sugar
1 Cup Flaked Coconut
1/2 teas. Watkins Coconut Extract
1/4 Cup Cream
1/4 teas. Watkins Vanilla, Original Double-Strength

Pour boiling water over oatmeal. Mix well. Cream butter and sugars. Beat in eggs, stir in soaked oatmeal. Add sifted dry ingredients. Turn into 9X13 inch pan sprayed with Watkins Cooking Spray and flour. Bake at 350 degrees for approximately 35 min. Cool or see Alternative Topping.

Prepare topping. Combine sugars, butter, cream, nuts, and coconut. Bring to bubbly boil, Stir in flavorings. Spread over cake and broil under broiler until it bubbles - about 4 to 5 minutes. Cool.

Alternative topping method:
1/4 Cup Evaporated Milk
2 Tbsp. Butter
1/2 Cup Sugar
1/2 Cup Coconut
1/2 Cup Pecans, chopped
1/2 teas. Watkins Vanilla, Original Double-Strength
1/2 teas. Watkins Coconut Extract

Mix ingredients together and spread on cake while it is still hot!! Return cake to oven until topping bubbles.
