
Mexican Fish Kabobs
1 Tbsp. / 15 mL Watkins Citrus
Cilantro Grapeseed Oil
3 Tbsp. / 45 mL Lime Juice
3/4 teas. / 4 mL Watkins Garlic Granules
3/4 teas. / 4 mL Watkins Cumin
1/2 teas. / 2.5 mL Watkins Chili Powder
1/4 teas. / 2.5 mL Watkins Oregano
1/4 teas. / 1.2 mL Salt
Dash (or to taste) Watkins Cayenne Pepper
1 pound / 454 g Cod or Halibut Fillets, cut into 1-inch chunks
Red or Green Bell Peppers, cut into 1-inch / 2.5-cm chunks
Medium Onion, cut into chunks
Cherry Tomatoes
Combine first eight ingredients in medium bowl; mix well.
Add fish chunks and marinate 10 to 15 minutes. Alternately thread layers of fish, peppers,
onion, and tomatoes onto skewers (pre-soak if wooden); save marinade for basting. Place
kabobs on grill or broiler pan. Cook 4 to 5 minutes per side, basting once on each side
with reserved marinade, or until fish flakes easily when tested with a fork. Makes 4
servings.
