Maine Potato Cake

1 Cup Butter - softened
2 Cups Sugar
2 Eggs
1 Cup Cold Mashed Potatoes
1 teas. Watkins Vanilla, Original Double-Strength
2 Cups Flour
1/4 Cup Watkins Pure Baking Cocoa
1/4 teas. Baking Soda
1 Cup Milk
1 Cup Chopped Walnuts

Preheat oven to 350 degrees. Spray a 13 x 9 x 2" baking pan with Watkins Cooking Spray. Cream butter and sugar until fluffy. Add eggs, 1 at a time, beating well after each addition. Blend in mashed potatoes and Watkins Vanilla. Combine flour, cocoa and baking soda. Add to creamed mixture alternately with milk, blending well after each addition. Stir in walnuts. Pour batter into prepared pan. Bake for 45 minutes or until cake tests done. Cool on a wire rack. Frost or ice if desired. Serves 12.
