Pound Cake with Pina Colada Topping
1 Can (8 oz. / 27 g) Unsweetened Crushed Pineapple,
undrained
1 Medium-sized Ripe Banana, chopped
1/2 teas. / 2.5 ml Watkins White Vanilla
1/4 teas. / 1.2 ml Watkins
Coconut Extract
1/4 teas. / 1.2 ml Watkins
Rum Extract
2 Tbsp. / 30 ml Toasted Flaked Coconut
Sliced Pound Cake
Vanilla Yogurt or Ice Cream
Toasted Coconut, for garnish
Combine pineapple, banana, extracts, and coconut in small
bowl; mix well. Place pound cake on serving plates; top with yogurt or ice cream, Pina
Colada Topping, and toasted coconut. Serve immediately. Makes 4 servings.
