Old Fashioned Rock Candy

This is a fun activity for kids which is also a science lesson.

What you need
2 cup water
4 cups white granulated sugar
1 tsp. Watkins Lemon, Raspberry, Cherry, Strawberry or other flavor of your choice
Food coloring if desired
An Adult
2 large jars
2-4 lengths of string or cord (you can also use lollipop sticks)
2-4 paper clips
2 pencils
Patience

Get 2 clean glass jars and some sturdy cotton string or cord. Tie 1 or 2 pieces of string around each pencil so they can dangle into the jar. Make sure that they are at least an inch apart. If you roll the string in sugar granules it helps the crystallization start faster. The string should be long enough to reach almost to the bottom of the jar. You can weigh down the bottom of the string with a paper clip.

Boil water in a saucepan. Remove from heat and stir in the first 3 1/2 cups of sugar until completely dissolved. Then start adding the remaining 1/2 cup of sugar a tablespoon at a time, always making sure to stir until dissolved. Add extract or flavoring and food coloring if desired.

Pour the sugar solution into the jars, and then insert the strings. Place the jar in a still, safe place where it will not be disturbed. Edible sugar crystals could begin to grow in a few hours if the sugar solution was saturated. Otherwise it may take a few days. When they have grown as big as you like, remove the crystals from the water.
