Strawberry Parfaits
1/4 Cup / 60 mL Cold Water
1 Envelope Unflavored Gelatin
1-1/2 Cups / 375 mL Boiling Water
4 teas. / 20 mL Watkins
Strawberry-Kiwi Punch Concentrate
Sugar Substitute to equal 3/4 Cup / 180 mL Sugar
1 Cup / 250 mL Sliced Strawberries
1 Cup / 250 mL Nonfat Sour Cream
Add cold water to large bowl and sprinkle gelatin over
top; let stand five minutes to soften. Add boiling water and stir until gelatin is
dissolved. Chill until mixture begins to thicken slightly. Add Strawberry-Kiwi Beverage
Concentrate and sugar substitute; mix well. Remove 2/3 cup / 160 mL of this mixture and
add to sliced strawberries. Spoon evenly into bottoms of six parfait glasses. Place in
freezer for 10 minutes or until set. Add sour cream to remaining gelatin mixture and mix
well. Spoon on top of chilled strawberry mixture in parfait glasses. Refrigerate until
set, about 30 minutes. Makes 6 servings.
