
Tomato, Chicken & Mushroom Soup
4 Cups Broth made with Watkins Chicken
Soup Base
1/2 Cup Water
1 1/2 Cups (8 Oz.) Diced Cooked Chicken Breast
3/4 Cup Shredded Carrots
1/2 Cup (2.5 Oz. Jar) Sliced Mushrooms, drained
1 3/4 Cups (14 1/2 Oz. Can) Stewed Tomatoes, undrained
1 Cup (8 Oz. Can) Tomato Sauce
1 teas. Watkins Italian Seasoning
1 Cup Uncooked rice
In a large saucepan, combine chicken broth, water,
chicken, and carrots. Bring mixture to a boil. Stir in mushrooms, undrained stewed
tomatoes, tomato sauce, and Italian Seasoning. Lower heat, cover, and simmer for 10
minutes. Add uncooked rice. Mix well to combine. Lower heat and simmer for 30 minutes,
stirring occasionally. Makes six servings (1 1/2 cups each)
