
Tomato Cajun Chicken Salad
1 1/2 Tbsp. Lemon Juice
1/2 teas. Liquid Garlic Spice
1/2 teas. Watkins Thyme
1/4 teas. Freshly Ground Watkins Sea Salt
1/4 teas. Watkins Black Pepper
1/8 teas. Watkins Cayene Pepper
1/2 Cup Plain Non-Fat Yogurt
3 Cups Cubed, Cooked Chicken (meat from about a 3 pound chicken)
1 Cup Thinly Sliced Green Onion
1/2 Cup Diced Green Bell Pepper
1/2 Cup Finely Shredded Carrot
1/2 Cup Diced Celery
3 Cups (about 1 1/2 Lbs.) seeded and diced fresh Tomatoes
Combine first 6 ingredients. Beat in yogurt. Gently fold
in chicken and next four ingredients into dressing. Chill for at least 30 minutes. Just
before serving fold in tomatoes.
