Turkey (or Chicken) Stuffing Casserole
1 Cup Chopped Onion
1 Cup Chopped Celery
1/2 Cup Butter or Margarine
2 Quarts Soft Bread Cubes (1/2")
1 teas. Salt
1/2 teas. Watkins
Sage
1/2 teas. Watkins
Poultry Seasoning
1/2 teas. Watkins
Black Pepper
3 Cups Cubed Cooked Turkey or Chicken
3 Tbsp. Butter or Margarine
3 Tbsp. All-Purpose Flour
1/2 teas. Salt
2 Cups prepared Watkins
Chicken Soup Base
3/4 Cup Water
2 Eggs, well beaten
1 Tbsp. Watkins
Parsley
Sauté onions and celery in 1/2 cup melted butter until
soft. Combine bread cubes, 1 teas. salt, sage, poultry seasoning and pepper in greased
3-quart casserole. Add onion mixture and toss gently. Top with turkey or chicken. Melt 3
Tbsp. butter in saucepan, blend in flour and 1/2 tsp. salt. Add chicken broth and water;
cook, stirring constantly, until mixture comes to a boil. Stir hot broth slowly into eggs;
add parsley. Pour over turkey in casserole. Cover and bake in 350 degree oven for 30
minutes. Uncover and continue baking 15 additional minutes. Makes 8 servings.
NOTE: This makes an excellent pot luck
supper of buffet item.
