
Veggie Meatloaf
1 Tbsp. Watkins Original Grapeseed Oil
½ Cup Chopped Onion
½ cup Chopped Celery
½ Cup Chopped Red or Green Bell Pepper
½ Cup Finely Diced Carrot
1 ½ Pounds Lean Ground Beef
½ Pound Ground Pork
1 ½ Cups Soft Bread Crumbs
2 Eggs, beaten
½ Cup Catsup
½ Cup Evaporated Milk
1 Tbsp. Watkins Beef Soup Base
1 Tbsp. Watkins Chili Powder
1 Tbsp. Watkins Parsley
2 teas. Watkins Garlic Flakes
¾ teas. Watkins Allspice
½ teas. Watkins Fiesta Seasoning
Dash of Watkins Pepper
4 Slices Bacon
Add oil and next four ingredients to a medium saucepan.
Sauté over medium heat until vegetables begin to brown, about 5 minutes; set aside. In
large bowl, combine beef and next 12 ingredients; mix. Add the sautéed vegetables;
combine well but do not overmix. Transfer mixture to an oiled 10 x 6 inch casserole and
form into an oval loaf. Arrange bacon pieces on top. Bake at 350 degrees for 55 minutes.
Remove from oven, drain off fat, and allow to stand 10 minutes. Slice into thick slices.
Makes 8 servings.
