
Watkins Vegetarian Soup Stock
3 Tbsp. Watkins Original Grapeseed Oil
2 leeks
3 carrots, chopped
3 stalks celery with leaves, thinly sliced
2 onions, chopped
12 cups water
2 tsp. salt - if desired
2 Tbsp Watkins
Parsley
1 Watkins
Bay Leaf
2 tsp. Watkins
Thyme
Watkins Granulated Black
Pepper to taste
In large pot, saute leeks, carrots, celery, onions and
garlic in Watkins
Original Grapeseed Oil. Cook, stirring gently until vegetables are soft but
not browned - about 15 minutes. Add water, and spices. Bring to a boil. Cover, reduce heat
ahd simmer for 2 hours. Strain stock, cool and refrigerate or freeze.
