
Watkins Italian Wedding Soup
Make Watkins
Basic Meatballs and use approximately 3/4 lb of the mixture for this recipe. Use a
melon baller to measure and form the tiny meatballs for this soup.
1 onion, diced
3 ribs celery, diced
3 carrots, diced
1 Tbsp. garlic, minced
6 cups prepared Watkins Chicken Soup & Gravy Base
2 tsp. Watkins Oregano
2 tsp. Watkins Red Pepper Flakes
1 Watkins Bay Leaf
1 can white beans
1 package frozen chopped spinach
1/2 tsp. Watkins Granulated Black Pepper
1/2 tsp. Watkins Fire Pepper (optional)
2 eggs, beaten
1/2 cup grated Parmesan cheese
Sauté vegetables and garlic in stockpot then add chicken
broth and spices. Simmer 15-20 minutes. Drop meatballs into simmering soup with a melon
baller and cook 3-4 minutes until they float to the top. Add beans and spinach - cook
until spinach is just wilted. Whisk eggs & Parmesan Cheese. Take the soup off the heat
and stir in egg mixture.
