
Watkins Vegetarian Pasta and Bean Soup
1 small onion, chopped
1 can diced tomatoes with juice
4 cups Watkins Vegetarian Soup Stock
1 cup small pasta like orzo or ditalini
1/2 tsp. Watkins
Oregano
1/8 tsp. Watkins
Red Pepper Flakes
1 clove garlic, crushed
1 can red kidney beans
1/4 tsp. Watkins
Granulated Black Pepper
Parmesan cheese
Spray 3 quart dutch oven with Watkins Cooking Spray.
Saute onion until tender. Add tomatoes, Watkins
Vegetarian Soup Stock, Watkins Oregano, Watkins Red Pepper Flakes,
Watkins Granulated
Black Pepper, garlic and pasta. Heat to boiling then reduce heat. Simmer
about 15 minutes until pasta is tender. Add beans and simmer about 10 mintues more. Serve
topped with Parmesan cheese.
