Watkins Vegetarian Zippy Rice and Bean Enchiladas

1 jar (24 oz.) thick & chunky style salsa
1 tsp. Watkins Chili Powder
1 cup instant rice
1 can black beans, rinsed & drained
6 flour tortillas, try the flavored varieties
1/4 cup shredded Cheddar Cheese
1/4 cup Monterey Jack Cheese
or
1/2 cup taco cheese blend

In 2 quart pan, bring 1 1/2 cups salsa and Watkins Chili Powder to a boil. Stir in rice and remove from heat. Cover and let stand for 5 minutes. Add beans, Spread 1/2 cup salsa on baking dish sprayed with Watkins Cooking Spray. Spoon about 1/2 cup of rice mixture into each tortilla and roll. Place seam side down in baking dish. Put remaining salsa on top. Sprinkle with cheeses. Bake at 375 degrees for approximately 15 minutes until cheeses are melted.
