
White Chili
Again, we attack the sensibilities of chili purists.
Chili is traditionally made with red meat, and has a dark sauce made with dried red
chiles. However, Mexicans and the Native Southwest Indians have been making light-colored
stews of chicken or pork with green chiles for centuries.
3-1/2 Cups / 875 mL Water
3 Cans (16 oz. / 454 g each) Great Northern Beans, undrained
1 Cup / 250 mL Chopped Onion
2 Cans (4 oz. / 113 g each) Chopped Green Chiles
1/4 Cup / 60 mL Watkins Chicken Soup Base
2 Tbsp. / 30 mL Watkins Chili Seasoning
1-1/2 teas. / 7.5 mL Watkins Garlic Flakes
1/2 teas. / 2.5 mL Watkins Oregano
To taste, Watkins Black Pepper
1 pound / 454 g Skinless, Boneless Chicken Breasts, cut into small cubes
Combine all ingredients in large saucepan and bring to a
boil; reduce heat and simmer 20 to 25 minutes or until chicken and onions are tender.
Serve hot.
