
Zucchini Bran Muffins
1/2 Cup Water
1/2 Cup Skim Milk, at room temperature
3 Egg Whites, whipped
1 1/2 Cups Grated Zucchini
1 teas. Watkins Vanilla,
Original Double Strength
1/2 Cup Applesauce
2 Cups Bran, unprocessed
1 teas. Watkins
Cinnamon
1/4 teas. Watkins
Nutmeg
1 Dash Watkins
Ginger
1 Dash Watkins
Ground Cloves
1 teas. Watkins
Baking Powder
1 teas. Baking Soda
1/2 Cup Granulated Sugar
Preheat oven at 350 degrees Fahrenheit. Prepare 12 muffin
pans with Watkins
Cooking Spray and flour. In a mixing bowl, combine water, milk, egg
whites, zucchini, vanilla and applesauce. In another mixing bowl combine bran, cinnamon,
nutmeg, ginger, ground cloves, baking powder, baking soda, and sugar. Mix wet ingredients
with dry ingredients just until moistened. Pour into prepared pans. Bake for 30 minutes.
Makes 12 muffins.
NOTE: Zucchini may be substituted
with 2 cups shredded apples, 1 cup pumpkin or 1 cup grated carrots.
