Thyme
Thyme is a
perennial that is native in southern Europe and the western Mediterranean, but it is also
grown both commercially and in home gardens.
Thyme has tiny, narrow, gray-green leaves that grow in
opposite pairs on the square, woody stems.. Thyme thrives in sunny locations on dry, stony
banks and heaths and it's aromatic scent attracts bees that produce a uniquely flavored
honey. It also acts to repel whiteflies.
Thyme has been known since ancient times for its magical,
culinary, and medicinal properties. There is an old time tradition that says that thyme
infused as a tea would let the person see fairies dancing. Young women used to wear a
corsage of thyme flowers to let the men know that they were available. Greek men in
particular liked the pungent scent of thyme and would rub it on their chests. The
Romans believed that adding thyme to bath water would impart energy. They also
included thyme in bedding to chase melancholy and to prevent nightmares. Thyme is
considered a moth repellent and can be burned as an incense. Thyme has antiseptic
properties and was used in sick rooms and for embalming the dead.
In the kitchen thyme has been used for centuries to season
sauces, soups, stuffing, and soups. Try a little on scrambled eggs or in cream cheese for
an instant burst of flavor. Use it to enhance the flavor of meats, fish or poultry.
